Do freelance product designers usually sign NDAs? I’m currently helping startups build MVPs and hesitant to sign one early on, especially since the product idea will likely change. Would love to hear your thoughts.

Signing NDAs is quite normal. 

Don’t let that stop you from working with startups. Founders can be protective of their ideas, which is totally understandable.
Just make sure to read the terms carefully. For instance, I always ask if I can showcase the work in my portfolio, and if they agree, I make sure to blur out any sensitive info.
Also, keep in mind that once they hire you, the work is technically theirs. They are just protecting their intellectual property (IP).
